Chicken Pot Pie Orzo (One Pot)

Servings: 4 servings
Ingredients

- 3 tbsp salted butter, divided
- 1 tbsp olive oil
- ½ tsp dried thyme
- 1 large sweet onion, finely chopped
- 4 cloves garlic, finely chopped
- 1 cup carrots, shredded or chopped
- 1 cup celery, finely chopped
- 1 cup frozen peas
- 1 cup uncooked orzo
- 2 cups chicken or vegetable broth
- 1 cup rotisserie chicken, roughly chopped or shredded
- 1 cup milk
- ½ cup Parmesan, grated
- Salt and pepper to taste
Directions
- Add olive oil and 2 tbsp butter to a heavy bottomed pan over medium heat. Once hot, add onion and a pinch of salt and cook for 4-5 minutes.
- Add garlic, carrots, celery, frozen peas, thyme, and another pinch of salt. Cook for a few minutes until garlic is tender and fragrant and vegetables are warmed through.
- Add uncooked orzo and broth, stir. Once simmering, cover and cook for about 6 minutes.
- Remove lid, add chicken and milk, stir. Cover and cook for 4 more minutes until pasta is al dente.
- If still watery, leave lid off and cook a few more minutes to evaporate remaining liquid.
- Stir in Parmesan and remaining butter. Season with salt and pepper to taste.
Notes
- I usually add 1-2 tbsp of turmeric after sautéing the vegetables.
- Butter: If using unsalted butter, add an extra pinch of salt
- Thyme: Can substitute with rosemary, herbs de Provence, or sage
- Onion: Sweet, yellow, white, or red onion all work
- Carrots: Can swap for butternut squash or sweet potato
- Celery: Can omit and use extra onion if you're not a celery fan
- Peas: Can substitute with green beans or use canned peas
- Orzo: Don't substitute - the liquid-to-pasta ratio is specific to orzo
- Chicken: Store-bought shredded chicken works, or cook 2 chicken breasts (diced and seasoned with salt, pepper, paprika, and garlic powder)
- Milk: Can use half and half, heavy cream, or unsweetened milk alternative
- Rotisserie chicken is good in the fridge for up to 4 days, but shouldn't sit out for more than 2 hours
