Sloppy Joes

Sloppy joes chock full of veggies and flavor. Probably a little too sloppy for Wellington. You can substitute other vegetables like spaghetti squash or zucchini.

Servings: 4-6 servings

Ingredients

Scale:
  • 1-1.5 lbs ground beef or turkey
  • 1 cup shredded carrots
  • 1 medium diced onion
  • 1 diced green bell pepper
  • 1 14.5oz can diced tomatoes
  • 1 8oz can tomato paste
  • 1 tbsp yellow mustard
  • ¼ cup ketchup
  • 1 tsp Worcestershire sauce
  • 4 cloves garlic, minced
  • Hamburger buns, for serving

Directions

  1. Brown meat in instant pot on saute mode, transfer to bowl.
  2. Saute onions, peppers, and garlic in the fat from the meat.
  3. Add rest of ingredients, do not stir to prevent burning.
  4. Cover and cook on high pressure for 5 minutes.
  5. Serve on hamburger buns.
